Weekend Citron is a refreshing lemon butter cake covered with lemon icing. Although it is a butter cake, the process is like genoise sponge cake method. The texture of cake will be fluffy and moist. The icing is made from freshly squeezed lemon juice with icing sugar, and warm up to 45˚C then apply to the cake, this let the cake have a very thin crust with refreshing sensation of true lemon flavour.
