Did you know?
Kuih Lapis is often referred to as Thousand-Layer Cake because of its numerous, delicate layers. While it doesn't actually have a thousand layers, the name highlights the intricate and time-consuming process of creating this beautiful and delicious treat. Each layer is carefully added, making it a labor of love and a testament to the patience of the cook.
Line the cake tin with parchment paper, making sure to leave some excess paper hanging over the sides. This will make it easier to lift the Kuih Lapis out later.
Using an electric mixer, cream together the softened butter, granulated sugar, and condensed milk until the mixture is light and fluffy. This should take about 5-7 minutes.
Add the eggs one at a time, beating well after each addition. This will ensure a smooth and uniform texture.
Fun Fact!
Kuih are not only delicious treats but also hold cultural significance in Malay traditions. They are often served during special occasions and celebrations, symbolizing good luck and prosperity. In some ceremonies, kuih are shared with family and friends to mark important milestones, making them an integral part of Malay social gatherings and festivities.
Gradually add the sifted flour and coconut milk, starting and ending with the flour. Mix until just combined. Don't overmix to maintain a tender texture.
Stir in the vanilla extract and a pinch of salt. This will enhance the flavours of your Kuih Lapis.
Divide the batter into equal portions. If you're feeling creative, add food colouring to each portion for a vibrant, layered effect.
Place the cake tin into a steamer over high heat. Pour a thin layer of batter (about 3-4 tablespoons) into the tin and steam for 3-5 minutes or until set.
Continue this process, layering one color on top of the other until all the batter is used. Remember to steam each layer until it sets before adding the next one.
Patience is key!
Take your time with each layer to ensure they set properly.
Allow the Kuih Lapis to cool completely in the tin. Once cooled, gently lift it out using the excess parchment paper and slice into squares.
There you have it, CakeRushers! A delightful recipe for Kuih Lapis that's sure to impress your friends and family. Enjoy the colourful layers of this Southeast Asian classic!
